Whole bunches of Riesling fermented in clay amphorae for nine months, then nine more in French oak — a Bohemian take on the Georgian method, from the U Všech svatých (All Saints) vineyard at Kutná Hora. Deep amber, properly dry and grippy, with dried apricot, orange peel and a bitter herbal snap on the finish. Biodynamic, spontaneously fermented, unfiltered.
