Patrick Sullivan made his name with site-driven Gippsland Chardonnay; this one comes from volcanic soils over limestone and basalt in Mount Gambier, Coonawarra and Wrattonbully. Whole-bunch pressed and fermented in barrel and tank. Lime, grapefruit and white peach with a touch of hazelnut and toast, and a fine mineral line. Lovely with roast chicken or buttery fish.
