Picpoul — often glossed as 'lip-stinger', though the Occitan more likely points at hens pecking the grapes — is the Languedoc's great shellfish white. This organic cuvée comes from vineyards above the Étang de Thau: lemon zest, white blossom and a saline, mineral finish. The classic match for oysters.
